Roasted Whole Wattleseed is an Australian native botanical with a deep roasted aroma and a complex flavour profile featuring nutty, earthy and coffee-like notes. Roasting helps develop its characteristic flavour while the whole-seed format allows for flexible preparation and slower, more controlled extraction.

The seeds can be freshly ground as required, helping retain their aroma until the point of use. Once ground, they can be added to baked goods, desserts, chocolate, sauces, spice rubs and beverages in much the same way as pre-ground wattleseed.

Whole Roasted Wattleseed is particularly well suited to infusion. The seeds can be gently cracked and steeped in cream, milk, syrups or sauces to impart flavour before being strained out. This makes them useful for custards, ice cream, ganache, panna cotta, caramel, dessert sauces and café-style beverages.

For savoury applications, whole or lightly crushed wattleseed can be used in slow-cooked dishes, braising liquids, marinades, pickling blends and spice mixtures. Its roasted character pairs well with meats, root vegetables, mushrooms and rich sauces.

The whole seed is also an excellent option for distillers and beverage producers. It can be cracked before maceration and infused into spirits, liqueurs, bitters and botanical beverages, where it contributes depth and roasted complexity. Compared with ground wattleseed, whole seeds generally extract more gradually and can be easier to strain or filter from the finished liquid.

Recipe and application ideas

Wattleseed-infused cream
Lightly crush the seeds and warm them gently in cream. Allow to steep, strain and use in custard, ganache, ice cream or panna cotta.

Freshly ground wattleseed biscuits
Grind the roasted seeds immediately before use and add them to shortbread, cookies or biscotti.

Wattleseed simple syrup
Infuse lightly crushed seeds into a sugar syrup for use in cocktails, mocktails, desserts or iced drinks.

Wattleseed slow-cooked beef
Add crushed seeds to a braising liquid with garlic, pepper and native herbs for a deeper roasted flavour.

Wattleseed liqueur infusion
Steep cracked wattleseed in a neutral spirit, then strain and sweeten to create a rich botanical liqueur.
